Back On Track!

Ok.....I am slowly but surely getting back on track. Still so much to do with my fathers estate but its getting there. Its not easy being an only child sometimes. 


So in November my baby girl turned 16!


So, I have decided to become a vegetarian and one day I hope to be a vegan. Not for dietary purposes but more for moral purposes if that makes sense.  It is a choice I made for myself and I am not pushing it on my family. I still make meat dishes for them. I have found a farm right down the road that raises organic and free range animals that harvests (sounds better than slaughter) their meats humanely that I will be purchasing from. I also have tons of deer meat in the freezer. How much more free range and organic can you get right? As a matter of fact for Christmas I made chocolate covered bacon and bacon cookies for gifts! Oh don't make that face! If you like bacon I PROMISE you its out of this world! Now I need to find a substitute for me.

I would like to share what I made for lunch for tomorrow. I had to try it when I was done and it was WONDERFUL! I have never roasted veggies before and wanted to give it a go so here is some pictures of my first try!

Beets, bell peppers, onion, asparagus, broccoli, carrots, and TONS of garlic pre-oven.

I added some sea salt, Annie's roasted pepper olive oil, and organic locally grown rosemary,


I found this in the cabinet and HAD to add it too!


All mixed and ready for the oven! 425 degrees for a little over an hour.

Hopefully over the next few posts I can get my photography skills down.....not too great at the moment.

  2. They are an aquired taste but how can you NOT eat ANYTHING with loads of red pepper evoo and sea salt!
