Juicing

I love to juice. Here is my favorite recipe.

This is the juicer my sweet friend sent me when mine died. I love it!

I use beets (including the greens), celery, cucumber, carrots, apple, and ginger root.

I add a half teaspoon of Moringa to every jar.

I end up with about a half gallon of juice and then I fill it the rest of the way with purified water.

It yields  12 small jars of yummy goodness. I keep them in the freezer until I am ready to drink it.

Slow Progress

For the last year I have been working pretty hard on getting healthy and changing my body composition. I have had my ups and downs. The last few weeks have been a down so it's time to refocus, regroup, and push on.

This is from December of last year

And this is from September of this year

I do have to admit I see a slight change and I also have to remember that when you are 40 it takes a little more time and effort to achieve your goals.

Now that I have wollowed in self pitty and copious amounts of food for two weeks it's time to get back on track!

Max and Breakfast

I decided to make the family an overnight blueberry and cream cheese bake for breakfast,  It turned out pretty good!

12 slices of bread
two blocks of cream cheese
12 eggs
teaspoon vanilla
1/4 cup maple syrup
1 cup blueberries
cube 6 slices of bread and place in the bottom of a casserole dish
cube the cream cheese and place on the bread crumbs
sprinkle on blueberries
place the other 6 slices of cubed bread on top
mix eggs, vanilla, and syrup and pour over the top
refrigerate over night

bake at 350 for 30 minutes covered and 30 minutes uncovered (the top should be golden and the center should be firm)

while the casserole is cooking boil
1 cup water
1 cup sugar
and two tablespoons of cornstarch
after it comes to a boil stir in one cup of blueberries and simmer until the blueberries pop and the sauce thickens slightly
add two tablespoons of butter

pour over casserole after its done baking

Of coarse I decided to have something different for breakfast

Sprouted bread, bacon, and a fried egg

YUM YUM

I was trying to make a grocery list while I cooked and Max decided other wise.

I hope everyone has a great day!

Check out my early birthday gift from my husband!

That's right! An official "Leg Lamp" from A Christmas Story! Yes, it will be going in my front room window on Thanksgiving Day!
